Sea prism stone is almost indestructible (I won't say anything more passed that for now), it's why we don't see people just cutting it up like no big deal. It also has the same energy as the sea, which is why it negates DF powers. Like Franky said, Doffy's strings are made via his DF ability, so the strings will not cut the sea prism stone. It makes you wonder what skills or tools are needed to construct it into things such as chains and bars, or even Smoker's jut.

That's why zoro didn't simply cut laws handcuffs or why the whitebeard pirates during the war in marineford didn't just cut off marco the phoenix handcuffs off. I think seastone might be the toughest material in the world of one piece or maybe its second only to diamonds.

But with awakening he can turn everything around him into strings. (Magellan would be pretty OP if he had awakening actually, lol) Diamante is a bit different. It's his DF ability FROM START to turn things he touches into flag-like matter (and make it flutter). Just how Gladius can make things he touches explode. Neither of them are awakened as far as we know - just in case you were implying that with the comparison
